Cheese produced exclusively with fresh whole sheep’s milk, collected only from flocks of the uncontaminated Amatriciano area.
“Sua Maestà il Sottobosco” is certainly a pecorino of great value, an excellence of the production range of the Historic Dairy of Amatrice, which as you can guess from the name itself, contains within it the most prestigious product of the undergrowth, that is, the truffle.
Obtained from a skilful blend, it stands out for its exceptional flavour: the intense and aromatic notes of the truffle blend perfectly with the sweetness of sheep’s milk in a combination of surprising aromas, scents and flavours. Unique product of its kind, characterized by a balanced structure resulting from an accurate maturation and seasoning that takes place in a humid environment for a period of at least 6 months.
Round-shaped cheese with an amber colour, the texture of which appears compact with important dark streaks due to the presence of the precious, finely chopped tuber.
