Handcrafted with milk from cows that graze on the Nebrodi Mountains, baked ricotta is a typical Sicilian product made by cooking ricotta in the oven one week after salting. In the BASICOTANA variant, only cow’s milk is used. Thanks to the cooking process, which involves various steps in the oven, there is the possibility of tasting it at different cooking stages: from the soft “to eat” to the more cooked “to grate”.
With a delicate taste and a slightly smoky scent, baked ricotta can be served as an appetizer together with other cheeses or cured meats or grated and “flaked” on first courses and pizza.
