Salva Cremasco is a DOP soft raw table cheese, produced exclusively with whole cow’s milk, with a washed rind, with a minimum aging of 75 days. The production area of Salva Cremasco includes the entire territory of the provinces of Bergamo, Brescia, Cremona, Lecco, Lodi and Milan, within which all milk production, cheese making and maturing operations must take place.
The product looks like a quadrangular parallelepiped shape. The paste has a rare irregularly distributed hole. It tends to be compact, crumbly, softer in the part immediately under the rind due to the purely centripetal ripening. White in color tending to straw yellow with increasing aging. The flavor of the pasta is aromatic and intense with more pronounced connotations as it ages.
