The “Fiocco Senese” raw ham is a pork-based salami produced in the areas of the Sienese countryside.

Produced only with local pigs, it has a savory but not salty taste, and an enveloping aroma thanks to the external coating of black pepper and red wine.

Since it is only the central slice of the pork leg, it is already boneless and lends itself well to cutting, even by machine.
