GRANCAPRA is a semi-fat goat cheese worked in grain, hard cooked, slow maturing obtained by rennet coagulation of fresh goat milk partially skimmed by surfacing. The production technique, similar to that of grana, is completely traditional, requiring all the experience of the dairyman and multiple manual operations. The consistency of the paste is compact, slightly grainy, dry. The taste is sapid and full but not spicy, the flavor is typically goat cheese with a fragrant and delicate aroma characterized by a pleasant sweet vein.
