Pecorino Fiore Sardo DOP from Gavoi is the only Italian DOP sheep cheese produced with raw milk.
Its name is probably due to the fact that until recently chestnut wood shapes were used for its manufacture, on the bottom of which a flower was engraved that imprinted a real unique and immediately recognizable brand on the cheese.
It is made by shepherds in typical places where the wood fire is still used, which gives the cheese a light smoky taste. The smells and aromas are intense. This cheese has all the sweetness of sheep’s milk.
