Produced in Amatrice, local sheep’s milk. The forms are aged in Cesanese Nero wine, an ancient indigenous grape variety. Subsequently the wheels are covered with the pomace of the same wine. It is something extraordinary!

Pasterurized sheep milk, rennet, lactic ferments, salt, black cesanese wine (2% at the origin). Surface treated with sunflower oil, white wine vinegar.
