Lonzone is a high-quality cured meat, authentic and rich in unique characteristics. Its flavor, initially sweet and delicate, becomes increasingly intense as it ages. It is produced using the loin of the black pig and has a tapered shape. It is composed of a thick strip of lard—the noble fat of the black pig—and the lean part of the loin. This cured meat perfectly represents the organoleptic qualities of a highly prized and sought-after meat. When cut, it is soft and velvety, with a vibrant red color and pale pink fat veins. No heat treatments are used to accelerate the aging process: Lonzone matures naturally for 4-6 months in temperature- and humidity-controlled environments. Its production is entirely artisanal and limited.
