The Bresaola della Valtellina is a cured meat based on the tip of the beef hip, produced in the homonymous locality in Northern Italy. Famous and renowned in the table of the Italians, Bresaola della Valtellina is guaranteed by the Community trademark IGP (Protected Geographical Indication).

Bresaola, being beef, is perfect served as a carpaccio, together with rocket, parmesan, orange or lemon and a drizzle of the inevitable extra virgin olive oil, or as an accompaniment to more structured dishes. As for wine pairings, Bresaola della Valtellina goes perfectly with structured reds such as Nebbiolo, Sforzato or Inferno.
