Alpeggio Blu is a blue cheese aged for approximately two months. Its flavor is intense, yet sweet and harmonious. It matures in controlled-ventilation environments, designed to allow for adequate oxygenation, essential for optimal development of the internal molds. It is then refined with aromatic herbs and mountain flowers, which enrich the cheese with a rounded, distinct aroma, even within the cheese. The result is a blend of the fresh aromas of mountain pastures and the more moist, earthy scents of the undergrowth, such as moss and mushrooms.
