Branzi Stravecchio is a semi-cooked cheese made from whole cow’s milk.
In this variant, it is aged for between 12 and 20 months, giving it a firm texture and a bold flavor, with possible slightly spicy nuances in the aftertaste. It is one of the oldest and most representative cheeses of the Orobie region. It owes its name to the village of Branzi, located in the Upper Brembana Valley, where its traditional production began and where it is still made today using whole cow’s milk.
